Mushroom recipe

I find mushrooms a bit boring on their own, kind of like aubergines or courgettes but they are fantastic at soaking up flavours and add a few to them and they become delicious and a star in their own right. I’m not a vegetarian but sometimes I like vegetarian meals and this is one of my favourites and oh so easy.


The great thing about this dish is that you can just chuck in whatever you feel like in terms of quantity, there is no right or wrong (except maybe with the garlic or lemon juice which need moderation!). If you want help with quantity ideas just ask!

  • Mushrooms – any types (its a great dish for leftover mushrooms)
  • Butter
  • Olive Oil
  • Creme Fraiche
  • Thyme (fresh)
  • Flat leaf parsley (fresh)
  • Lemon juice
  • Garlic (optional)
  • Spring onions (optional)
  • Salt
  • Pepper


  • Preheat oven to 160 degrees
  • Chop mushrooms into good sized chunks (you want them to be bite sized when they are cooked but remember mushrooms shrink a lot when cooked)
  • Put a baking tray or oven proof frying pan on the hob over a medium heat – add good chunk of butter and glug of olive oil, mushrooms, fresh thyme leaves, salt, pepper and some crushed garlic (optional). Cook for 4/5 minutes until mushrooms are starting to reduce and everything is mixing together
  • Put the whole thing in the oven for 15-20 minutes (keep an eye on the mushrooms so they don’t dry out, if they start to look dry add more butter or olive oil)
  • Once cooked put the mushrooms in a bowl and add creme fraiche, roughly chopped flat leaf parsley, a good squeeze of lemon juice and some finely chopped spring onions (optional)
This is delicious served with a hot buttered jacket potato and salad. Otherwise you can use it as a vegetable side dish with steak, burgers etc.

  1. Mmmmm, another goodie to try out. Totally into vegetarian meals of late (no I’m not a veggie). I used to do something similar but never with creme fraiche – will definitely have to try! xX

  3. I LOVE mushrooms – just had a mushroom curry here…and hubby didn’t notice no meat!! This would be good on a bruschetta
