Guest Post – Aggie MacKenzie’s Easy Recipes for Kids

This is the first ever guest post which appears on my Blog, another first for me! Aggie approached me about this and offered a post which included some recipes for kids. Always on the lookout for something new to cook with the Boy, and fitting in with my love of Food I thought it would be a good match. I hope you like it.

This probably sounds a bit sniffy, but when I overhear a parent saying the default supper in their home is pasta with pesto, my heart sinks. It’s the middle-class equivalent of fish fingers and frozen chips (mind you, home made fish fingers are quite another thing). Is it P&P again because you’re too damn tired/ fed up/ short of time/ unimaginative/ unconfident with food/ you know they’ll eat it without a fuss? Trouble is, when young taste buds are not stimulated, they become reluctant to try anything new and out of their comfort zone. My rule was always, you, Buster, have got to have at least two mouthfuls before you are allowed to reject. And basically that’s all that’s on offer. At the weekends cook supper together. Yes, it’ll take longer and the mess will be more than you’d like, but it’s a great way to get them trying new flavours and textures.

Here are a couple of simple ideas for midweek cooking.

Simple fish and chips

Serves 4

  • 1kg large potatoes (Desiree are good), no need to peel
  • Groundnut oil
  • Salt
  • 4 fillets haddock or similar white fish
  • Little olive oil and seasoning

Heat the oven to 200C fan/180C conventional. Cut each potato in half, then each half into wedges. Put into a bowl, throw over some oil and salt and stir to coat the potatoes. Lay the pieces out on a baking sheet (no need to parboil) and put in the oven. Check after 15 minutes, and turn over with a fish slice. Return to the oven and continue cooking till crispy and golden on the outside and soft in the middle (about another 15 minutes).

After 8-10 minutes, put the fillets on a separate baking tray, sprinkle with oil and salt and pepper. Place in the oven for 7-10 minutes. Serve with the usual: vinegar, tomato ketchup and bread and butter. They’ll love you for it.

Fruity-creamy treats

Serves 4

  • Any soft fruits such as nectarines, blackberries, blueberries, strawberries, bananas (or a mix)
  • 100g plain yogurt
  • 100g cream or crème fraiche
  • Little soft brown sugar

Divide fruits between 4 ramekins. Mix yogurt and cream together and spoon over the top. Sprinkle each with a little sugar and chill till ready to eat (can be done a few hours in advance).

  1. It’s funny, we had pasta n’ pesto last night *blushes* and you’re right, it is exactly as you say, lol! Anyway, this fish n chips malarkey sounds nice and easy and healthy, and I reckon I’ll attempt it some time this week. Great post! :O) x @Chaoskay
