Easy peasy yummy scrummy fish finger recipe

Yes fish fingers are in every supermarket freezer cabinet and very easy to pick up and throw in your shopping trolley but in my opinion this recipe is just as easy and much more delicious, so delicious that the Boy now scorns Captain Birdseye when presented to him. So skip the freezer aisle and give these a try, I promise you and your kids will love them.

I love cooking but I am not a fan of weighing or measuring ingredients so these amounts are all a guide so feel free to adjust to your liking.

Ingredients (serves 2-3)

  • skinless and boneless fish fillets (we like haddock best but you can also use cod or even salmon).
  • 1 egg, beaten.
  • cup of breadcrumbs (homemade ones are best but I usually buy them already made, yes I realise the irony of this!)
  • flour for dusting.
  • oil for frying.
  • optional ingredients: lemon juice, parsley or other herbs, sesame seeds, salt and pepper.
Preparation
  1. Cut the fish into pieces, fingers or chunks are best.
  2. Prepare 3 bowls, one with the flour, one with the beaten egg and one with the breadcrumbs (in the breadcrumbs bowl you can add some fresh herbs for extra flavour or some sesame seeds are also nice for a different coating).
  3. Add some oil to a pan and put on a medium heat, I usually put in enough oil to cover the pan as if shallow frying.
  4. Dip the fish into each of the three bowl slightly coating them with each  in order (flour, egg, breadcrumbs) and then straight into the pan, they should sizzle a little (this will make them a nice golden colour).
  5. Fry until golden on all sides.
  6. Serve with a slice of lemon.

Gluten free alternative

Rather than using breadcrumbs you can use sesame seeds as the coating.
